I’m just sitting here at work watching the clock…it seems to be moving quite slowly. I have absolutely nothing to do today. I finished everything before lunch. I even finished a project that isn’t due for another week. So…since I am bored, I thought I would make you read about it.
On Saturday we pretty much just stayed home all day. Scott has been sick, so he slept a lot and I did some house work. I finished all of the laundry…even folded it and put it all away! I got most of my cleaning done…still have a bit to do tonight though. We also did our grocery shopping and meal planning for the next 2 weeks.
Saturday night we cut up some cheese for crackers and sliced some peaches that weren’t very ripe and made some orange juice smoothies. Then we sat down to watch Happy Feet. For those of you who haven’t seen Happy Feet…DON’T! We are never going to get those 108 minutes of our lives back. It was a terrible movie!
On Sunday we went to church and then had lunch over at my parents’ house. We then headed back home to get a bit more cleaning done, but had a change of plans. Derek and Lindsay called to see if we want to go up to the Ocoee River for some site seeing and hiking. We had a great time…didn’t get home until about 10:00 last night. Tomorrow I’ll post some pictures from our outdoor fun. We forgot to bring the laptop in to work this morning, so I don’t have the pictures. I know you will all be on the edge of your seats waiting for the pictures!
Let me think…ooh…tomorrow night we are having some friends over for dinner. I think I have the menu all set. I know you are all dying to find out what I’m cooking, huh? Okay…I’ll tell you. For the main dish I am making Chicken Parmesan and Spaghetti. I am “making” French Bread (yep…opening the bag from the bakery and toasting it) and a Romaine/Spinach Salad (I like both types of leaves mixed). I’ll also add some cucumber and tomato. For our appetizer I am frying Cheese Ravioli and serving with Marinara Sauce. For dessert I am really going all out…a Chocolate Pudding Pie! Actually, I love pudding desserts! I was going to try and make Tiramisu, but after looking for a recipe I realized it might be a bit more work than what I wanted to do. So…I’ll mix up the instant pudding and pour it into a pre-made graham cracker shell and put Cool Whip on the top. Maybe I’ll try the Tiramisu when I don’t have a huge meal to make.
